Stir in curry mix, ketchup, and salt until dissolved and mixture is thickened, about 2 minutes. Stir in chicken until evenly distributed. Remove from heat and keep warm.

This madras curry ketchup will keep a week or more in the refrigerator. Note: Madras curry powder is sold in the spice aisle of most grocery stores. Other types of curry powder will also work here.
