Preheat the oven. The goal is to get the lamb to an internal temperature of 140 degrees, but if your oven is too hot, your meat could end up a little tougher than you'd like.
Preheat oven to 220C. Mix the ras el hanout and 1 teaspoon of salt and rub over the lamb steaks. Do this at least half an hour but preferably several hours before cooking.
